Cacao Strawberry Energy Balls (vegan & gluten-free)

These little Cacao Strawberry Energy Balls (vegan & gf) are the perfect mid-afternoon office snack. They'll keep you energised and satisfied all afternoon!

Ingredients

  • ½ cup cacao powder
  • ¼ cup goji berries
  • 1 tablespoon coconut oil
  • 1 cup ground almonds
  • cup hemp hearts
  • 1 tablespoon coconut butter
  • ¾ cup fresh strawberries, chopped

Instructions

  • Add all ingredients to a large bowl.
  • Mix together with your hands until the strawberries are crushed, all ingredients are combined and a sticky mixture is formed (about 2 minutes).
  • Shape the mixture into about 9 energy balls by hand.
  • Place in tupperware in the fridge for about 30 minutes to firm up. 
  • Store the balls in the fridge or freezer until needed (they'll last about a week). 

Notes

  • These energy balls can be bitter if the strawberries you use aren't that sweet! If you prefer a sweeter snack, simply add 1 tablespoon maple syrup, coconut nectar or agave, or ¼ teaspoon stevia powder to the mix before you shape the balls.
  • You can also roll the balls in cacao powder if you want to create a more interesting look!
