- ½ cup cacao powder
- ¼ cup goji berries
- 1 tablespoon coconut oil
- 1 cup ground almonds
- ⅔ cup hemp hearts
- 1 tablespoon coconut butter
- ¾ cup fresh strawberries, chopped
Add all ingredients to a large bowl.
Mix together with your hands until the strawberries are crushed, all ingredients are combined and a sticky mixture is formed (about 2 minutes).
Shape the mixture into about 9 energy balls by hand.
Place in tupperware in the fridge for about 30 minutes to firm up.
Store the balls in the fridge or freezer until needed (they'll last about a week).
- These energy balls can be bitter if the strawberries you use aren't that sweet! If you prefer a sweeter snack, simply add 1 tablespoon maple syrup, coconut nectar or agave, or ¼ teaspoon stevia powder to the mix before you shape the balls.
- You can also roll the balls in cacao powder if you want to create a more interesting look!
