Iced Pumpkin Spice Latte

This iced pumpkin spice latte recipe is easy to make and way better for you than the Starbucks version. Plus, it's only 5 ingredients and 5 minutes. Can easily be vegan.

Equipment

Ingredients

  • 3 tablespoon pumpkin puree
  • ½ teaspoon pumpkin spice mix
  • tablespoon maple syrup or date paste
  • cups your favorite milk (I like oat milk)
  • 1-2 shots espresso - skip for caffeine-free (or ¼ cup strong coffee)
  • Ice

To decorate - optional

Instructions

  • Add all ingredients except ice to a blender, and blitz for 10-15 seconds until fully combined.
  • Pour into a tall glass over ice.
  • Optionally top with whipped cream, cinnamon sticks and an extra dash of pumpkin spice.

Notes

Pumpkin spice - If you don't have any, make your own pumpkin pie spice blend by mixing 1 tablespoon cinnamon, and 1 teaspoon each ginger, nutmeg & cloves.
Sugar-free - Try using stevia drops or xylitol for a sugar free version. 
No blender? - Make this homemade pumpkin spice latte by whisking all ingredients together in a jug or bowl until combined. 
Storage - freeze leftover pumpkin puree in ice cube moulds. Freeze until ready to use.
