Protein-Packed Avocado Toast


Super simple avocado toast recipe.

Packed with vegan protein (chickpeas) for a filling breakfast or lunch.

Blend oats to flour.

Then to bowl add oats, salt, arrowroot, coconut oil & water - mix.

While 2 slices bread are toasting, mash 1/2 an avocado & 1 tsp vinegar.

Season well with salt & pepper.

Place dough between two sheets of parchment paper and roll out flat.

Separately mash 1/3 cup chickpeas until flaky. Season with salt & pepper.

Spread avo and chickpeas over toast.

Place quiche pan over pastry and flip!

Press pastry into pan and trim edges.

Bake in oven 20 mins.

Decorate with radish slices or microgreens and enjoy!
