This stretchy vegan mozzarella cheese is perfect for grilled cheese sandwiches and pizza.  Just 5 ingredients and 10 minutes are all you need!

1) Add cashews, tapioca starch, nutritional yeast, lemon juice, salt and water to a blender.

2) Blend on high power until smooth.

3) Pour into a small saucepan. Cook - stirring - for 3-5 mins.

4) Cheese will begin to form clumps - keep stirring!

5) Clumps will increase...

6) ...Until eventually you have smooth mozzarella!

7) Use immediately. Add to pizza or to a grilled cheese sandwich.
