This classic vegan noodle soup is made with 'chicken' pieces from soy curls. One-pot, 30 minutes and 10 ingredients. Perfect vegan comfort food.

1) Saute onion and celery.

2) Add carrots, potatoes, garlic, thyme, soy curls and stock.

3) Simmer until potatoes are tender.

4) Add noodles and parsley, and simmer 3-4 minutes.

5) Season well and serve with fresh bread if desired.
