Taking just 25 minutes, this creamy vegan pasta with mushrooms and broccoli is an ideal weeknight dinner.  Quick, satisfying and healthy! Gluten free option too.

Cook pasta as per package instructions, and set aside.

While pasta cooks, saute garlic in olive oil for 30 seconds.

Add sliced mushrooms and saute 4 mins.

Add coconut milk, broccoli & peas.

Simmer for 5 mins.

Season with salt & pepper, and add sliced kale.

Simmer 2 more mins,.

Stir in cooked pasta and serve with vegan parmesan,
