This easy vegan chickpea curry is made with fresh spinach and chickpeas for protein. One-pot, 25 minutes and 10 ingredients. Perfect vegan weeknight dinner.

1) Saute onion for 4 minutes.

2) Add garlic, garam masala, coriander and turmeric, and cook for 1 minute.

3) Add tomatoes, coconut milk, chickpeas and vegetable broth.

4) Bring to a boil, then reduce heat and simmer 15 minutes.

5) Stir in spinach, and cook until just wilted.

6) Serve with naan or rice, and top with fresh cilantro.
