Taking 20 mins to prep, these vegan summer rolls with peanut sauce are perfect for quick dinners. Made with fresh crunchy veggies and high protein smoked tofu, they're naturally vegan and gluten free!

Add all peanut sauce ingredients to a bowl and whisk to combine.

Slice all veggies and tofu into long thin strips and place in bowls.

Submerge rice wrapper in plate of water.

Flip over and dip other side.

Place vegetables and tofu on wrapper.

Fold up bottom of wrapper.

Then fold sides in.

Roll up until completely closed.

Slice rolls in half.

Serve on a platter with peanut sauce!
