This vegetarian stew recipe with red lentils takes less than 30 minutes. Naturally vegan/vegetarian and perfect for easy weeknight dinners.

Steam sauté onion for 5 minutes.

Add celery, potato, carrot, lentils and all other ingredients.

Bring to boil, then simmer 10 minutes.

Add broccoli and cook 8-10 mins more.

Stir in leafy greens, soy sauce and S&P. Allow to just wilt.

Serve in large bowls  for an easy weeknight meal.
