Vegan Snickers Bars (6 Ingredients, No Bake)

These vegan snickers bars use just 6 ingredients and are made without refined sugar or oil. They're the perfect gluten free healthy chocolate dessert you can feel good about!

Have I got a treat for you today. These Vegan Snickers Bars have been lovingly crafted and tested multiple times (such a tough job), and I'm pretty proud of them.

I've been craving a treat like this for quite some time, so finally rolled up my sleeves and got busy in the kitchen to perfect the recipe.

With a soft oat flour base and a smooth peanut caramel centre, they're smothered in dark chocolate and sprinkled with crunchy peanuts and sea salt, to make the perfect snack.

And the best part? They use just SIX simple ingredients so no fancy shopping lists here!

VEGAN SNICKERS BARS - RECIPE NOTES

Healthy - This recipe is the ultimate in healthy-but-indulgent desserts. You can feel good knowing that you're using wholesome ingredients like dates, oats and peanuts, and that you're making treats that are totally vegan, gluten free and refined sugar free.

Oil free - I'm particularly proud of the fact these vegan snickers bars are also oil-free! They don't need any because the peanut butter works perfectly as a binder, and for that creamy flavour.

Parchment paper - One important note for this recipe however is to ensure you line your container with parchment paper. This will make the bars MUCH easier to remove (I've tried without - it's not pretty) and your life much easier.

Cut before freezing - Similarly, it's important to cut the mixture into bars before freezing them - not after - as they will be too solid to cut once they're set. Enjoy!

FAQS

Are these vegan snickers bars healthy?

These snickers bars are made from scratch with whole food ingredients (with the exception of the chocolate). Therefore I think they're much healthier than the standard store-bought versions, simply because they don't contain loads of refined sugar and and saturated fats. That said, they are treats and you probably shouldn't eat them all in one day! Pace yourself. 🙂

Can I use an alternative to peanut butter?

Of course! They won't truly be 'snickers' bars because the peanut flavour is an essential component of that, but they'll still taste incredible. Try using almond butter and sprinkling toasted almonds on top for a more grown-up version of these bars.

Is a food processor the same as a blender? Can I use one instead of the other?

No. They do work differently. This recipe calls for both, and that's because the high speed blender is great for making oats into a flour (put them in a food processor and you'll just get oat meal), and the food processor is really good at mixing the peanut butter and dates until they are smooth (the mixture would probably get stuck in a blender).

Vegan Snickers Bars (6 Ingredients, No Bake)

Special Equipment

  • High speed blender (like a Vitamix or Blendtec)
  • Food processor

Ingredients

Base

  • ¾ cup oats
  • 2 tablespoon smooth peanut butter
  • ½ tablespoon maple syrup
  • 2 tablespoon water

Peanut Filling

  • ½ a packed cup dates
  • ¾ cup peanut butter (smooth or crunchy, doesn't matter as it will be processed)
  • ⅓ cup peanuts (I like using roasted as they have a stronger flavour, but you can use unroasted if preferred)

Chocolate Topping

  • 1 80g bar vegan dark chocolate (use sugar free if making recipe free of refined suagr)
  • Sea salt flakes (optional)

Instructions

Base

  • Pour oats into a high speed blender and blitz into really fine flour. (Alternatively you can use store-bought oat flour.)
  • Pour flour into a bowl, and add all base ingredients. Mix (with a spoon or by hand) until well combined (mixture will be a bit crumbly but you should just about be able to shape it into a ball).
  • Line a rectangular food storage container (about 6 x 7½ inches) with parchment paper, and press dough into it, flattening down well with your hands.

Filling

  • For the peanut filling, combine dates and peanut butter in a food processor and blend until creamy. You may need to scrape the sides down and blitz for a couple of minutes to get it as smooth as possible.
  • Spread filling over bases, smoothing it as you go - you might need to use your hands as texture willl probably be quite firm - and scatter peanuts on top (reserving some for decoration later), gently pressing them into filling.
  • With a flat knife (a table knife will do), cut into 9 rectangular bars.
  • Transfer container to fridge and allow to set (about 30 minutes).

Chocolate

  • Melt chocolate in a double burner (or in a heatproof bowl over a saucepan of water).
  • Using flat knife, gently remove bars from their container and place on a baking sheet lined with parchment paper.
  • Dip each bar in melted chocolate (I like to use two forks to hold them while I dunk them!) and return to baking tray.
  • Scatter peanuts and sea salt flakes over each bar.
  • Refrigerate for another 30 minutes or until chocolate is set. Enjoy!
